Of all the things  you can make with a whole, fresh jackfruit, tacos were the first thing that came to my mind. It seems like it’s been on many vegan lips, and with reason. Its meaty texture fits nicely into a corn tortilla, and the BBQ flavor wraps the flesh ever so brightly. I looked at many recipes and what came out was great. Many people say that it resembles carnitas, however, I thought it was clear I was eating some sort of fruit and not meat. I had fresh jackfruit, but a 20-oz can of green jackfruit in brine or sugar would do perfectly. Refrain from buying jackfruit in syrup. That would not work here. Enjoy your tacos and feel free to improvise!

BBQ Sauce:

  • 1 cup ketchup
  • 2 tablespoons molasses
  • 1 tablespoon apple cider vinegar
  • 1 tablespoons olive oil
  • 1/4 cup blueberry or blackberry jam
  • 2 tablespoons maple syrup
  • 1 1/2 teaspoon soy sauce
  • 1 clove garlic, minced
  • 1 1/2 teaspoon smoked paprika
  • 1 1/2 teaspoon dried oregano
  • Hot sauce, to taste
  • Black pepper, to taste

Jackfruit Filling:

  • 2 20-oz cans jackfruit, in brine or water
  • 2 tablespoons brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder

Toppings:

  • Avocado
  • Slaw
  • Lime
  • More BBQ sauce
  • Vegan tortillas

Make the BBQ sauce:

Whisk all ingredients together in a small saucepan. Warm gently over medium heat, cover and simmer for 20 minutes.

Make the jackfruit filling:

Mix together all ingredients except the jackfruit. Rinse, drain, and dry the jackfruit. Discard the core, if needed, and mix the flesh with the spices. Warm a large skillet over medium heat. Once hot, add 2 tablespoons oil of your choice. Add the spiced jackfruit flesh and sauté for 2-3 minutes. Add 3/4 cup of your BBQ sauce and enough water to make the mixture saucy. Reduce the heat to low and simmer, covered for 25 minutes. Remove the lid and let reduce for 15 minutes more. Then crank up the heat for 2-3 minutes to seal the flavor and the color. You can now use two forks to shred the jackfruit.

Garnish your tortillas with the jackfruit and the toppings. Squeeze some lime juice on top, add more BBQ sauce if desired, and enjoy!
